Ingredients
- 1 pack Karley’s Dawta Real Jamaican Fruit Cake Mix (Chopped)
- 3 eggs
- 6 oz melted butter or ¾ cup
- 1–1½ cups chopped nuts & fruits (Raisins, maraschino cherries, cranberries, cashew, pecan, walnuts, pumpkin seeds, almonds — choose your favourites)
- 1 to 2 teaspoon orange zest by grating the peal of an orange (Have fun!)
- 1/4 cup Brandy or rum (for brushing the cake)
Directions
- Preheat oven to 350°F. Grease a 10 inch loaf pan with baking spray or butter and flour it. Set aside.
- Prepare orange zest by grating the skin of the orange after which chopped assorted nuts and fruits. Dust nuts and fruits with flour to prevent them from sinking to the bottom of the batter.
- Add orange zest to the eggs and whisk.
- In medium bowl, prepare Karley’s Dawta Real Jamaican Fruit Cake Mix by following instructions on the packet. Fold and nuts and fruits, don't over mix.
- Pour cake batter into prepared loaf pan. Top with nuts and fruits.
- Bake for 40 - 50 minutes, until center is set and a toothpick inserted comes out with crumb. Remove cake from oven and pour rum/brandy, cover cake with foil and allow to cool.
- Serve and enjoy, and store cake with a cover to retain moisture.
